Peyote Plants/Animal fun

I get dogs (like your last screenshot) most of the time... Only god a pigeon once (I picked most of Paleto bay's locations). Died soon after because it showed controls for keyboard and I couldn't quite figure which button was to land (probably RB/R1). Also, dying seems to teleport to hospital, always? not sure. When I exited it without dying, it put me in the same area, but the car wasn't warped close enough

Yeah it would be cool to have them permanently, but at this point, obviously, it's just another "exclusive" event for Rockstar to use casually to attract players.
It's also noticeable how handling / animations aren't really as refined as controlling a character, because they were only made for this "easter egg" in single player and Rockstar just added them to online. It's sort of ok for ground animals, but more noticeable with birds. That's why it feels so weird (and difficult) to fly them - they don't really have aerodynamics or flight model like planes, it's like there's just a few animations and you control them and direction to go. They're also kind of laggy to respond, which leads to crashes & dying.
But it is a very transformative experience, which gives a whole new way to perceive and experience the entirety of Los Santos!
